Vanilla Mini Cakes


With the daughter back in school, there's more time on hand for me-time now. So after all the mundane chores, what I did was to bake these little goodies. I realized that in baking individual servings, there is no question of wastage and the best part is each gets his share. The now-preferred flavour for the daughter is Vanilla... So these were specially made for her for her late noon snack for her to dig in to these soft little cakes. Thes little/small cakes take very little time of yours and the oven. Was a special treat for my daughter, can be for someone you love too.

The recipe is from Cakes and Bakes , which is by the way a great book to own. With gorgeous pictures accompanying most recipes, this book is is a great as a gift too., The book has over 70 recipes, most of which are worth a try. The book is divided into sections of small cakes and bakes, muffins, easy bakes, cookies and cakes for special occassions.

The basic recipe contains prunes, but since her prefernce was for plain ones, she did get that. The recipe is for muffins and makes 12 muffins. I used 12 mini ramekins to make my little girl feel special that she gets to have her own bowl entirely of her share.

What you need are

50 g sugar lumps
300g Plain Flour
3t Baking Powder
125g Muscavado Sugar
3 eggs
4T oil
50g Unsalted Butter (melted)
1 and 1/2 t Vanilla Extract
150 ml Yoghurt

Roughly crush the sugar lumps.  In a bowl, mix the flour, baking powder and the muscavado sugar.

Beat the eggs, oil, butter and the vanilla extract. Fold the flour mixture into this gently.
 Grease the ramekins and spoon the mixture into them. Bake in a preheated oven at 190 degree C.

Some of the cakes rose, some cracked and some had a domed top. 

Tastes best when served warm on the very same day. Ideally, do not store them because they tend to get soggy.

If desired sprinkle crushed sugar lumps before baking.
